Cellar Blanc is the limited, “special occasion” sibling in A Coffee Farm’s first harvest—crafted for guests who want a cup with extra dimension, without needing a lecture to enjoy it. The coffee comes from the same Ka‘ū land that Alla and Rus have spent the last three years restoring and cultivating, transforming a former sugar plantation into a living coffee farm. They’ve built this project alongside their partner Jim, a longtime Hawai‘i farmer with deep experience in cultivation—bringing both heart and hard-earned know-how to every step.
In the cup, Cellar Blanc leans into winemaking inspiration. This Catuai–Lempira blend is crafted with a white-wine yeast culture to lift aromatics and deepen complexity, creating a profile that feels juicy, polished, and cellar-sophisticated. Fresh roasted cacao anchors the base, while notes of dried pear and apricot glide through a silky body and settle into a long, fragrant finish. It’s expressive and indulgent, but still beautifully approachable.
